を抽出し、食品等に添加しているが、これらの方法のう
ち、急激な温度変化を与えることが破砕方法として一番
効果的なのではあるが、このような処理を行う場合、特
に高温で処理した場合には、ビタミンCなどの熱に対し
て比較的弱い成分は分解され、殆んど残らないという問
題がある。
