PURPOSE:To obtain enriched edible pollen having excellent digestibility and containing the same active components as raw pollen, by adding a component decomposable easily with heat, e.g. vitamin C, etc. to treated pollen. CONSTITUTION:Although pollen is a very tiny particle having a diameter of usually 30-40mu, it is covered with a mantle layer made of a hard substance having extremely high chemical stability and is not easily digestible. To improve digestibility of pollen, the mantle layer of pollen is broken by a proper method such as rapid temperature change, etc., and the content having high nutrient value is extracted. The extracted substance is mixed with a component of pollen or a component same as that of pollen which is relatively easily decomposable by temperature change, especially at high temperature, e.g. vitamin C, etc., and royal jelly. An easily digestible product having the effect of vitamin C as well as that of pollen can be prepared by this process.
