Abstract

PURPOSE:To prevent wasteful use of a detergent and shorten the washing time by supplying a large quantity of the detergent to places where the quantity of adhered fats is large, and supplying the detergent in a small quantity to places where the quantity of adhered fats is small. CONSTITUTION:The quantity of fats of oil mist generated from cooked articles is large on the side near to a suction port, and is small on the side near to an exhaust fan. When a pump of a detergent supplier is operated, the detergent is sprayed from washing nozzles 17. Upon this occasion, many washing nozzles are provided at line near to the suction port, and further the diameter of each washing nozzle 17a at the line near to the suction port is large, and still further a pipe 20 of the line near to the suction port is near to the pump of the detergent supplier and the pipeline resistance is small. Therefore, in any of the above examples, the detergent is sprayed from the line near the suction port in a quantity larger than that of the detergent sprayed from the line near to the exhaust fan. The buffle plate and the inner wall of the main body of the smoke exhausting device which are located near the suction and to which much fats are adhered, are washed with the detergent in a quantity larger than that used in other places.

Conventional Structure and Problems Conventionally, this type of collision-type smoke evacuation device shown in FIG.
3, the direction is sharply turned, and the inertia force causes the oil and fat in the air to collide with the inner wall surface and baffle plate of the smoke evacuation device body, and is removed. Cleaning was performed by spraying a cleaning liquid from cleaning nozzles 4, 5, and 6 in the row. An example of the distribution of oil and fat adhering to the inner wall surface and baffle plate of the smoke evacuation device main body of such a conventional smoke evacuation device is shown in Table 1. There are fewer and fewer.

Table 1 On the other hand, the cleaning nozzles are evenly distributed in each row as shown in Fig. 2, and a cleaning liquid supply device (not shown) is provided.
The cleaning fluid from the exhaust fan is supplied from a row close to the exhaust fan. Therefore, when looking at the spraying state of the cleaning liquid, the rows closer to the exhaust fan have higher pressure and a larger amount of spray because they are closer to the pump (not shown) of the cleaning liquid supply device.

In Fig. 3, reference numeral 8 denotes a main body of a smoke evacuation device installed at a certain distance above the range 9, and numeral 10 denotes a fan installed above the smoke evacuation device that removes oily smoke generated in the heating section 11 of the range 9. This is a smoke guide plate that assists in guiding the smoke from 12 to the intake port 13. A plurality of buckle plates 14 are provided on the inner wall of the smoke evacuation device main body 8.
, 15.16 and the plurality of baffle plates 14, 15.1
A plurality of rows of cleaning nozzles 17 are provided for cleaning the inner walls of the smoke evacuation device 6 and the smoke evacuation device main body 8. This cleaning nozzle 17 is connected by pipes 18, 19, 20 from a cleaning liquid supply device (not shown) via a pump (not shown). Examples of the arrangement and piping of the cleaning nozzles provided in multiple rows are shown in Figures 4 to 6.
More cleaning nozzles 17 are provided in the pipe 20 provided in the row near the intake port 13 of the exhaust fan 6 than in the pipe 18 provided in the row closer to the exhaust fan 6/12. The pipes 2 shown in FIG.

A cleaning nozzle 17a with a larger nozzle diameter is provided. What is shown in FIG. 6 is the intake port 13 of the smoke evacuation device main body 8.
The pipes 2o provided in the row closest to the exhaust fan 12 are arranged closer to the pump (not shown) of the cleaning liquid supply device than the pipes 18 provided in the row closer to the exhaust fan 12.

The operation in the above configuration will be explained. First, to explain the case of exhausting smoke, when starting cooking in the heating section 11 of the range 9,
When the exhaust fan 12 is rotated, oily smoke generated from the food to be cooked is sucked into the smoke evacuation device main body 8 from the intake port 13 along the smoke guide plate 1o, and passes through the plurality of baffle plates 14, 15 .
At step 16, the direction is sharply bent as it advances toward the exhaust port, but during this time, the oil and fat is caused by the inertia of the plurality of baffle plates 14.1.
5.16 and collided with and adhered to the inner wall of the smoke exhaust device main body 87,
,,−ru. The air from which most of the oil and fat content has been removed in this way passes through the fan 12 and is discharged to the outside from the exhaust port. Here, when looking at the state of the adhesion of oil and fat to the baffle plates 14, 15, 16 and the inner wall of the smoke evacuation device main body 8, it is found that the amount of oil and fat attached to the exhaust fan 12 is large on the side closer to the intake port 13, as explained in the conventional example.
The side closer to is slightly lower.

Next, the case of cleaning will be explained. When the exhaust fan 12 is stopped and the pump of the cleaning liquid supply device is operated, the cleaning liquid pressurized by the pump is sprayed from the cleaning nozzle 17 and adheres to the inner wall of the smoke exhaust device main body 8 and the buckle plates 14, 15, and 16. Clean oil and fat. At this time, in the embodiment shown in FIG. 4, many cleaning nozzles are provided in the row near the intake port 13, and in the embodiment shown in FIG. Because the nozzle diameter of the nozzle 17 is large, and in the embodiment shown in FIG. 6, the vibrator 2o in the row near the intake port 13 is close to the pump of the cleaning liquid supply device and has little pipe resistance. More cleaning liquid is sprayed from the cleaning nozzles in the row near the intake port 13 than from the cleaning nozzles in the row near the exhaust fan, and more oil is sprayed on the panfur board near the intake port 13 and on the inner wall of the smoke evacuation device main body 8, which have a lot of oil and fat attached. It will be cleaned with a cleaning solution.

Effects of the Invention As shown in the above embodiments, the smoke exhaust system of the present invention supplies a large amount of cleaning liquid to areas with a large amount of oil and fat adhesion, and supplies a small amount of cleaning liquid to areas with a small amount of oil and fat adhesion. Since cleaning is carried out using the cleaning method, the cleaning liquid is effectively used, there is no wastage of the cleaning liquid, and the cleaning time can be shortened. Furthermore, the use of hot water as the cleaning solution saves energy and is highly effective.
