Abstract

PURPOSE: To prepare refined SAKE having low alcohol concentration, mild taste and refreshing feeling, by adding a koji having strong acidity obtained by propagating a fungus capable of producing citric acid without feeding lactic acid of forming it to raw ingredients for SAKE in preparation.
CONSTITUTION: A koji is prepared by using a koji mold capable of extremely producing citric acid, e.g., a fungus like Aspergillus-Japonicus Saito. 20W40wt% koji based on total rice of preparation is added, cultivation is carried out without adding lactic acid or forming it, alcohol content is adjusted to about 8wt%, and acidity is controlled to about 3W4.
