Abstract

PURPOSE: To preserve boiled noodles, safely, an extremely low cost, by sterilizing boiled noodles with sodium hypochlorite, and then immersion in an aqueous solution of an agent which exhibits acidity in aqueous solution.
CONSTITUTION: Boiled noodles prepared by conventional process are immersed in a dilute solution of sodium hypochlorite. After thorough draining, the noodles are immersed in a solution of an agent which is safe as a food and exhibits acidity in the solution, e.g. acetic acid solution, to remove the residual chlorine completely. The noodles thus treated are again drained completely, and preserved in a polyethylene bag, etc.
