Abstract

PURPOSE:To enable preservation for a long period and direct eating without boiling and steaming for removing smell of lye, by treating KONJAK (devil's- tongue) produced by a normal process with a weak acidic solution to neutralize lye contained in the KONJAK and thermally sterilizing the resultant KONJAK in dilute edible vinegar solution. CONSTITUTION:KONJAK, such as sliced KONJAK prepared by slicing sheet KONJAK or noodle-like KONJAK obtained by extruding KONJAK into the form of noodles, is subjected to dipping treatment in a weak acidic solution (e.g. edible vinegar or organic acid, such as malic acid or citric acid). The sliced KONJAK or noodle-like KONJAK after the acid treatment is hermetically sealed and packaged in a bag filled with a dilute edible vinegar solution.
