Abstract
PURPOSE: To prepare an ice cream eatable directly with the fingers, by convering an ice cream with a viscoelastic substance obtained by kneading starch consisting essentially of amylopectin with a saccharide and water under heating.
CONSTITUTION: Starch such as refined rice flour, starch of maize, etc. consisting essentially of amylopectin with low amylose content is blended with a saccharide such as maltose, sugar, etc. in a weight ratio of 1:(1W25), kneaded with water, and steamed by a steamer. Water is added to a saccharide, the white, etc. to give a whip, which is kneaded with the blend of starch and saccharide to give a viscoelastic substance. An ice cream is covered with the viscoelastic substance by a covering machine to give a product, which is packed and frozen.
