Abstract

CONSTITUTION: Unripe bananas are charged into a closed post-ripening chamber, and the post-ripening is carried out controlling the temperature according to the post-ripening temperature schedule prepared by setting the total cumulative amounts of discharged CO2 gas corresponding to various ripening stages as the standard value. The cumulative amount Z of the carbon dioxide gas discharged from the banana during the post-ripening process is calculated by a computer, and compared with the standard value of the cumulative amount of discharged CO2 (Zp) stored in the computer. When the difference is larger than a preset value, the temperature in the closed chamber is controlled by operating the cooling apparatus or the heater and the progress of the post-ripening is adjusted. When the cumulative amount of discharged CO2 reaches the preset target value (Zf), the order directing the finish of the whole post-ripening process is outputted by the computer.
