Abstract
PURPOSE: To prepare a malt having low chromaticity of barly juice and high diastase competence in high yield, by spraying an aqueous solution of gibberellin A1 or its functional derivative to barley granules in the step after water absorption.
CONSTITUTION: In preparing a malt by making barley granules absorb water and germinating them, barley granules during the preparation of malt in the step after water absorption are sprayed with 0.001W10ppm, preferably 0.01W0.5ppm based on the weight of the barley before water absorption of gibberellin A1 or its functional derivative such as a lower alkyl ester, alkali metal salt, or alkaline earth metal salt of gibberellin A1.
