Abstract
PURPOSE: To prepare raw meat slighty losing both softness in roasting and green degree, by bonding raw meat pieces using powder obtained by blending protein powder with calcium oxide or calcium hydroxide powder and organic acid powder.
CONSTITUTION: 100pts.wt. protein powder (the white powder, soybean protein powder, fish protein meat powder, gluten powder, etc.) is blended with 5W40pts. wt. calcium oxide or calcium hydroxide and organic acid powder (citric acid, malic acid, ascorbic acid, etc.) in an amount to give about 2wt% more than the neutralization equivalent of the calcium salt to give powder for bonding. About 1W3g of this powder based on 100cm2 of the surface of raw meat pieces of fish meat or animal meat is sprinkled on the meat pieces, which are piled. They are kept in an atmosphere at -60W-30°C for ≥1hr so that they are bonded.
