Abstract

PURPOSE: To sterilize a spice securely without damaging a flavor component, by blowing low-pressure steam into a spice in a container with a stirring machine, drying it with hot air, cooling it quickly with cold air.
CONSTITUTION: A spice such as seed type spice e.g., pepper, mustard, leaf type spices, e.g., laurel, etc., and other spices, e.g., onion, garlic, is fed to the sterilizing net drum 2 in the heat-retaining box 5 and sterilized under heating by introducing low-pressure steam at 80W100°C at ≤5kg/cm2 from the blow inlet 4 for 5W45min while being rotated and stirred. It is then dried by blowing hot air at 70W110°C in a ratio of 0.5W2m3/min/kg for 10W30min. It is cooled by introducing cold air at ≤35°C, having passed through a sterilization filter or being treated with a sterilization lamp, into the container.
