Abstract
PURPOSE: To prepare a saccharified substance containing maltohexaose from starch, by using amylase G6 produced by a microorganism belonging to the genus Bacillus.
CONSTITUTION: Amylase G6 obtained by the cultivation of a microorganism, e.g. Bacillus circulans G6 (FERM-P No.5853), belonging to Bacillus circulans, and capable of producing maltohexaose from starch or a partial hydrolyzate thereof is reacted with starch, amylose, amylopectin or a partial hydrolyzate thereof at a substrate concentration of 5W40%, preferably 5W20%, and a pH of 4W11, preferably 8W9, at a temperature of 40W60°C.
