Abstract
PURPOSE: To prepare the titled substance under mild conditions selectively, by treating a mixture of an amino acid and a long-chain farty acid with a bacterium such as one belonging to the genus Pseudomonas, etc. in the presence of an inert organic solvent or both an inert organic solvent and a carrier.
CONSTITUTION: A bacterium such as Pseudomonas diminuta, Xanthomonas arubilinians (AJ 11,634, FERM-P 5,790), belonging to the genus Pseudomonas, Xanthomonas, or Gluconobacter, capable of synthesizing an N-long-chain acylamino acid from an amino acid and a long-chain fatty acid, is cultivated. The culture solution, the mold, and the treated mold are brought into contact with an amino acid such as alanine, cystine, erc. and an N-long-chain fatty acid such as caproic acid, palmitic acid, etc. in an aqueous solution or an inert organic solvent. When the inert organic solvent such as benzine, n-hexane, etc. is added to the reaction system, a supporting carrier such as Celite, siliceous earth, etc. is also preferably added. The desired substance is conventionally separated.
