Abstract

PURPOSE: To soften and treat a hardened seaweed, by reacting a carbohydrase with the seaweed.
CONSTITUTION: A laver collected at the third time is washed with seawater to remove durt, green laver, etc. therefrom. The laver is then finely cut by a cutter and mixed with fresh water. In the process, an adequate amount of a carbohydrase agent is dissolved in the fresh water to soften the surface of the laver by the enzymic action thereof. For example, the enzymic concentration of the treating solution is in the range of 2W0.2%, and adjusted to a pH of 4.8W5.2. The softening treatment is carried out at a relatively high temperature of 35W 40°C for 3W4hr or a low temperature of about 30°C or below for 8hr or longer. After the treatment, the laver is dried in the sun or by hot air, to give the aimed dried laver product.
