Abstract

PURPOSE: To peel fruits without damaging them easily, by quickly freezing the fruits, thawing only the surface parts thereof with hot water, and peeling the thawed surface parts thereof.
CONSTITUTION: Fruits are cooled and frozen quickly in a freezer to -20°C or below, and sprinkled with hot water at 25W65°C or then dipped in the hot water to thaw only the parts near epidermis thereof. The fruits are then peeled by the brushing, hydrobrushing, or manual operations. This method is applicable to white peaches, yellow peaches, apricots, Japanese plums, kiwi fruits, nectarines, tomatoes, longans, mangos, litchis, rambutans, etc.
