Abstract
PURPOSE: To prepare starch storable for a long time, having a moderate aromatic smoking odor and improved resistance to the high-temperature treatment, by smoking an alkaline starch adjusted to a moisture content in the solid of 50% or less and pH 9W11.
CONSTITUTION: An alkaline starch is adjusted to pH 9W11 by an alkaline agent which is accepted for use as food, e.g. sodium bicarbonate or sodium polyphosphate, conditioned to a moisture content in the solid of 50% or less and smoked at 20W80°C.
