Abstract
PURPOSE:A trypsin inhibitor and a protein capable of forming gel are admixed to the meat of krill to produce a ground meat of krill that has excellent capability of increasing stickness. CONSTITUTION:Meat of krill, from which head, internal organs and shells are removed, is combined with 500-200,000 units of trypsin inhibitor per 1.0kg of the meat and less than 100wt%, preferably 10-40wt%, of a protein having high capability of forming gel such as soybean protein, activated gluten or albumen on the basis of the meat and they are ground.
