Abstract
PURPOSE: To prepare a ground krill flesh having improved texture and flavor, by adding a trypsin inhibitor and an edible oil to the flesh of a krill, and milling the resultant mixture.
CONSTITUTION: A trypsin inhibitor in an amount of 500W200,000 units per the flesh after removal of the head, entrails and shell of a krill and 0.5W100%, based on the flesh of the krill, edible oil, e.g. soybean oil or rapeseed oil, are added to 1.0kg the flesh of the krill and milled to give the aimed ground krill flesh.
