Abstract

PURPOSE: To inactivate a proteolytic enzyme and obtain a ground krill flesh capable of improving the jelly strength when made into a paste product, by adding a defatted or whole soybean meal to a krill flesh in the grinding step or a ground krill flesh.
CONSTITUTION: A defatted or whole soybean meal is added to a krill flesh collected from a krill by the conventional method in the grinding step of the flesh by a mechanical means having a mixing or grinding function, e.g. a silent cutter, or a ground krill flesh prepared by said means to give a ground krill flesh. The defatted or whole soybean meal has an action to inactivate the proteolytic enzyme remaining in the krill flesh, and preferably added in an amount of 0.1W5.0wt% based on the flesh. The water-soluble nitrogen index of the defatted soybean meal is 20W50% for a medium-modified one and 51W100% for an unmodified one. The unmodified defatted soybean meal is more effective than the medium-modified one.
