Abstract
PURPOSE: An emulsified food vegetable oil that is composed of a small amount of xanthane gum, soybean protein hydrolyzed with an enzyme or acid and powdery mustard, thus showing high emulsion stability when packed in a plastic vessel to prevent the sparation into oil and water layers.
CONSTITUTION: An emulsified food vegetable oil such as mayonnaise, dressing or spread is combined with 0.1W0.4% of xanthane gum, 0.5W3% of soybean protein hydrolyzed with an enzyme or acid and 0.2W1% of powder mustard based on the emulsified food vegetable oil.
