Abstract

PURPOSE: To prepare L-glutamic acid, by adding a carbohydrate to a culture medium, reducing the carbohydrate concentration in the culture medium, and cultivating a microorganism capable of producing the L-glutamic acid in the culture medium.
CONSTITUTION: A microorganism having the ability to produce L-glutamic acid, e.g. Brevibacterium divaricatum ATCC-14020, is cultivated aerobically in a liquid culture medium of a carbohydrate as a main carbon source which is assimilated by said microorganism. A carbohydrate is then added to keep the concentration of the carbohydrate in the culture medium ≤0.5g/dl during the whole cultivation time and minimize the period when the carbohydrate is not substantially present, and the L- glutamic acid thus produced by the cultivation is collected.
