Abstract

PURPOSE: β-Ionone is converted into 4-hydroxy-β-ionone by the action of a microorganism belonging to Rhizopus.
CONSTITUTION: A microorganism belonging to Rhizopus, e.g., Rhizopus oryzae AHU-6590 or Rhizopus arrhizus IFO-5780, is inoculated in a liquid culture medium and after cultivation β-ionone is added to the culture medium. The agitation or aeration cultivation is continued whereby β-ionone is converted into 4-hydroxy-β- ionone. The resultant 4-hydroxy-β-ionone is collected and the cells separated from the culture mixture after the cultivation is reused for the conversion of β-ionone.
