Abstract

PURPOSE: To prepare soft bean curd having rich taste and flavor and excellent physical properties, in high yield, by treating soya milk with a homogenizer before coagulation.
CONSTITUTION: Insoluble bean-curd refuse is separated by heating soybean juice obtained by grinding soaked soybeans, and the soya milk thus obtained is treated with a homogenizer such as a milk homogenizer, an impact cell mill, etc. pref. under a pressure of ≥150kg/cm2. After the treatment, the soya milk is coagulated by adding 0.15W2.0wt% of a coagulating agent thereto.
