Abstract

PURPOSE: To obtain an extract from a snapping turtle, having a long storage life, and containing even the blood component effectively, by treating a live snapping turtle with an alcohol, and heating the turtle in a glucide solution of high concentration.
CONSTITUTION: After stopping the feeding, a snapping turtle is set free in a circulating filtered water for 7W10 days to wash the body with salt water. The body is then immersed in ethyl alcohol of about 70% for several hr, and washed with ethyl alochol of the same concentration. Cuts are made in the body, and the body is put into an aqueous solution of a glucide, e.g. honey, in a high concentration, and heated at about 40°C for about 2hr. The body is cut open, pressed, extracted, and then sterilized at about 85°C for about 45min. The extract thus obtained is purified by centrigugation and processed into a drink etc. The body of the turtle is used as a food of delicate flavor.
