Abstract

PURPOSE: To prepare high-purity glucose in high yields, by adding an α-1,6-glucosidase in enzymatic saccharification of starch using glucoamylase.
CONSTITUTION: In preparing glucose by saccharifying liguid starch using glucoamylase, an α-1,6-glucosidase of a bacterium of the genus Aerobactor, Streptomyces, bacillus, etc. is added at a saccharification value of not more than about 80%, preferably about 30W80%, and saccharification is carried out enzymically in pH5W 7 at 45W60°C.
