CONSTITUTION: The electrolysis tank is divided into cathode side 1 and anode side 3 with diaphragm 7. The cathode side 1 includes a mixture of the starting material of soybean protein with a soaking or extracting solution or a solution of soybean protein 2, while the anode side 3 includes a soaking solution, extract or solvent 4. A direct current is applied between both electrodes and the cathode side is stirred and the liquid in the anode side is exchanged by small portions. Thus, the efficiency of the electrolytic treatment is increased and the volume of the anode side 3 can be made small.
