Abstract

PURPOSE:To maintain coffee freshness effectively without blistering of an outside bag by allowing a deoxidizer contg. humidity-controlled granular alkaline earth metal hydroxide, iron powder and electrolyte to coexist with roasted coffee in a sealed system. CONSTITUTION:Water or humidity control liquid is impregnated in granular alkaline earth metal hydroxide, and the surfaces thereof are coated with fine fillers. Iron powder as an oxygen absorbent component as well as strong electrolyte salt are added and mixed to and with this coated granular material. The deoxidizer consisting of the above-mentioned component is tightly sealed together with roasted coffee in a substantially nonair-permeable packaging material or sealing case. Roasted coffee is oxidized by the oxygen in the air and is apt to cause a degradation in its freshness; moreover, it produces a large amount of CO2, but this deoxidizer effectively absorbes CO2 and provides deoxidizing performance rapidly, hence, the coffee freshness is preserved without causing blistering of the outside bag.
