Abstract

PURPOSE: A strain of Aspergillus niger is cultured in a medium containing a flavonoid with a hydroxyl on the 3-position to produce a novel enzyme that has never known action and substrate specificity.
CONSTITUTION: A strain of Aspergillus niger is cultured in a medium containing a flavonoid with a hydroxyl on the 3-position such as quercetin as an inducer to produce the objective enzyme. A usual culture medium is used for this cultivation and the concentration of the flavonoid is adjusted to 0.1W2%, the pH usually to some 4W6 and the temperature to some 30°F. The new enzyme resulting from the cultivation has substrate specificities of hydrolyzing anthocyan to liberate a saccharide and of hydrolyzing a synthetic substrate of 0-nitrophenyl-ρ-D-galactoside to form nitrophenol and a saccharide.
