Abstract

PURPOSE: The container for solidification and crushing that is filled with liquid confectionery mixture containing forced bubbles is removed from the bubble charger and forcibly cooled in the cooler, thus increasing the cooling efficiency of the liquid confectionery and producing granular confectionery containing forced bubbles in high productivity.
CONSTITUTION: The liquid confectionery mixture melted by heating is poured into the bubble mixer 1 provided with stirring blades inside. A harmless gas such as carbon dioxide or nitrogen gas is charged into the mixer to, e.g., 30W80kg/cm2 and the blade is rotated to mix bubles in the liquid confectionery. Then, the pressure of the inside of the container 2 for solidification and crushing is made equal to that of the mixer 1 and valves 41 and 42 in the path 3 are opened so that the liquid confectionery mixture is sent to the container 2 by its self weight. The container is sent to the cooler and cooled to produce solid confectionery containing forced bubbles.
