Abstract

PURPOSE: "Onigiri", rice balls of triangle or round shape, is made with boiled rice which is seasoned with a sauce consisting of "tamari" (a kind of soy sauce) and other seasonings and a piece of eel which is seasoned with the same sauce and roasted is placed into the onigiri; then heated to give said onigiri penetrated with the essence of eel which can be preserved for a long time.
CONSTITUTION: A sauce prepared from "tamari", "koikuchi shoyu" (dark-colored and thickened type of soy sauce), "mirin" (sweetened rice wine), dogtooth violet starch, sugar and so on is sprayed on boiled rice and they are mixed and formed into "onigiri". Meanwhile, eel is roasted with the same sauce and cut into small pieces 1; then placed into the "onigiri" 3 of seasoned rice 2 and the resultant onigiri is heated with charcoal fire or in an electronic oven.
