Abstract
PURPOSE: Food is immersed in hot water into which oxygen is blown and sterilized in high efficiency for a short time without deterioration of food.
CONSTITUTION: Food is dipped in water which is heated over 40°C and into which oxygen gas or a gas containing oxygen is blown. The water used may be untreated; however, when it is adjusted to 4 or less pH, the efficiency of sterilization is remarkably improved. The adjustment of pH is desired to be effected using an acid harmless to man, such as hydrochloric, acetic, citric or malic acid. Chlorine may be added to the water and the source of chlorine is, e.g., chlorine gas, liquid chlorine, or compounds capable of producing chlorine by decomposition. The amount of chlorine is about 0.2W0.4mg%. The sufficient sterilizing effect can be obtained using the water over 40°C; however, when food susceptible to heat is sterilized, the temperature is kept lower than 70°C.
