Abstract
PURPOSE:To prepare a dessert food free from seaweed and acetic acid odors, by sealing (A) a gelatinized agar containing a colorant and a fruit juice and (B) water colored with a colorant in a container. CONSTITUTION:Agar is dissolved in hot water to form a hot sol, which is mixed with a colorant, a fruit juice, table luxuries, organic acids, and, if necessary, perfumes, and cooled to give a gel. The gel is cut to prisms of size about 1.5-4mm, and filled into a container with water colored by a colorant, and sealed to give a principal part, to which a syrup adjusted to pH 2.8-3.8 is attached.
