Abstract
PURPOSE: To reduce extremely phosphorylase inhibiting activity and to prevent the bad influence upon the glycogen metabolism in a living body, by reacting an amylase inhibitor having phosphorylase inhibiting activity with an α-amylase.
CONSTITUTION: An amylase inhibitor having both glycoside hydrolase inhibiting activity and phorylase inhibiting activity is reacted with an α-amylase. An α- amylase obtained from various sources, e.g., animals, higher plants, microorganisms, etc. may be used as the α-amylase. For example, 100 units of the glucoamylase inhibiting activity of amylase inhibitor is reacted with approximately 0.1W 100 units of the α-amylase in pH of 3W10, at 20W80°C for 0.1W100hr. The phosphorylase inhibiting activity and glycoamylase inhibiting activity can be thus reduced extremely to not more than 0.1.
