Abstract

PURPOSE: A food additive that is produced by adding alginic acid or an acidic alginate salt hard soluble in water to liquid or solid flavors, thus improving the processability and texture of the food without any adverse effect on the taste.
CONSTITUTION: Said additive is produced by adding alginic acid, an acidic alginate salt hard soluble in water, which is prepared by bombining an alginate salt such as sodium, or magensium alginate with an acid such as sulfuric acid or tartaric acid, or an acid-treated brown alga, which is prepared by bringing a brown alga such as tangle or other edible seaweed into contact with an acid such as hydrochloric or citric acid, to a liquid flavor such as soysauce or sweet sake or solid flavor such as "miso" or sugar. The addition of said additive to food such as flesh of fish or shell, meat of brids and animals, protein or starch results in the addition of alginic acid, which improves the hardness of meat or flesh, the binding properties of starch and protein and easiness of cooking.
