Abstract

PURPOSE: To prepare ground fermented grain paste useful as a paste product on its raw material, by grinding grains having water in an amount more than dried state into finely divided particles.
CONSTITUTION: Grains or cracked grains of cereals, e.g., rice are immersed in water, dehydrated to a condition having more water content than a dried state, for example, a water content of 15W18wt%, preferably 20W70wt%, more preferably 20W40wt%, and atomized into vegetable gound fermented paste. The resulting material alone is processed or together with fish meat, meat, and vegetable powder to give a paste product or its raw material.
