Abstract

PURPOSE: A mildewcide for foods, comprising conalbumin, glycoprotein existing in the protein of the white of an egg as an active ingredient.
CONSTITUTION: Conalbumin is added to foods, e.g., noodles, the pastry of a dumpling stuffed with minced pork, won ton, a shao-mai, a fried soybean curd, bread, etc. to prevent the occurrence of mildew. The amount of the mildewcide is preferably about 0.1W10wt%. based on the total weight of food. Conalbumin is a glycoprotein having a molecular weight of about 87,000 and an isoelectric point of 6.0, and accounts for about 13wt% of the protein of the white of an egg. The glycoprotein can be obtained usually by fractionation, e.g., fractionation with ammonium sulfate, from the white of an egg.
