Abstract
PURPOSE: To improve the preventing effect of adhesion, texture and product yield, by making a noodle from a mixture of wheat with an insoluble soybean protein having a water-soluble nitrogen index ≤30 and if necessary other powdery materials for food etc.
CONSTITUTION: An insoluble soybean protein having a water-soluble nitrogen index ≤30 and if necessary one or more types of other powdery raw materials for food, edible fats or oils, etc. are added to wheat flour to give the aimed noodle or Chinese dough coating sheet. A highly modified whole fat soybean, highly modified defatted soybean, concentrated soybean protein, etc. prepared by extraction with an alcohol, etc. may be cited as the insoluble soybean protein. A starch, modified starch, wheat protein, corn flour, etc. may be cited as the powdery raw materials for food. The addition of the insoluble soybean protein and powdery raw materials improves the resistance to the teeth and preventing effect on the breaking of the noodle. Various kinds of natural fats or oils or shortenings may be cited as the edible fats or oils, and are effective for improving the color, luster and appearance of the noodle and dough coating sheet and softening of the texture.
