Abstract

PURPOSE: To prepare a low salt soy having a salt content of 6-14%, without lowering the taste and flavor of the original soy, by the reverse-osmotic treatment of soy.

The concentrated and de-salted soy is, if necessary, added with the raw soy to adjust the salt concentration.
