Abstract
PURPOSE: To prepare a low salt soy having a salt content of 6-14%, without lowering the taste and flavor of the original soy, by the reverse-osmotic treatment of soy.
CONSTITUTION: Raw soy (common soy) is diluted with water (dilution degree: 2-20), and de-salted (to a salt concentration of 6-14%) by reverse osmosis (material of the reverse osmosis membrane is cellulose ester, etc.; reverse osmosis module is tubular, spiral, hollow fibers, plates, etc.; reverse osmotic pressure is 20-80 kg/cm2: for example a reverse osmosis membrane having a de-salting rate of 50- 95% when a 500 ppm NaCl Solution is treated under a pressure of 42 kg/cm2). The concentrated and de-salted soy is, if necessary, added with the raw soy to adjust the salt concentration.
