されたことから、エチルアミンがグルタミン酸のγ位に
結合していたことが示される。また、加水分解で生じた
グルタミン酸がL型であることも、グルタミン酸デヒド
ロゲナーゼ(GluDH)により確認し、得られた化合物がL
−テアニンであることを確認した。高速液体クロマトグ
ラフィー(カラム;Develosil ODS-HG-5, 検出;蛍光(E

析) による純度測定の結果、得られたテアニンの純度は
