食材を調製するためのホットエアオーブン
本発明は、請求項1の導入部に記載された特徴事項を有する、食材を調製する
ためのホットエア(高温空気)オーブンに関する。
PCT/スエーデン国特許出願第93/00204号は、食材を調製するためのホット
エアオーブンを開示している。このホットエアオーブンによると、強冷凍した食
材、例えばチップ状のポテトをワイヤバスケットに入れた状態で調理チャンバへ
挿入することができ、この調理チャンバ内で、空気交換を行うことなく、ホット
エア(高温空気)によりポテトを調理する。この段階で、調理チャンバを閉じ、
食材から出た水分により、調理チャンバ内の高温スチーム空気を作らせる。
食材を完全に調理した後、スライドにより空気供給チャンネルおよび空気排出

空気供給チャンネルまたは空気排出チャンネルを改善するのに、少なくとも1

ャンバに接続すると、調理チャンバ内の空気を、より急速かつ均一に交換するこ
とができる。このような特徴は、調製時間を短くするという好ましい影響も与え
る。
フラップ制御システムを簡単にするためには、フラップを各開口部と連動させ
ないことがよい。
バスケットの回転軸線に対して直交する面内における断面を長方形とし、コー
ナーを丸くすれば、調製中にバスケット内に位置する食材を有利に移動させるこ
とができる。バスケットのコーナーは、5mm〜60mmの曲率半径を有するこ
とが好ましい。
コーナーの曲率半径が小さいと、チップ状のポテトを調製する際に、ポテトの
一部が割れる。このような割れは、外観上好ましくない。コーナーの曲率半径を
大きくするか、またはバスケットに丸みを付けておけば、チップ状のポテトは、
ホットエアオーブン内での調製中に大きく移動することはない。

エアオーブンの右側または左側または正面に配置することができる。

ケーシング内には、調理チャンバ5が設けられている。この調理チャンバ5内

調理チャンバ5内には、ホットエアファン12、空気偏向器13および4つの
加熱素子14も設けられている。ホットエアオーブン1の背面壁8のゾーンには
、調理チャンバ5を空気供給チャンネル16に接続するための多数の開口部15
、および調理チャンバ5を空気排出チャンネル18に接続するための多数の開口
部17が接続されている。これら開口部15および17は、ファン19を介して
、それぞれ空気供給チャンネルおよび空気排出チャンネルに接続されている。こ
れ
らのチャンネルでは、フラップ19が図1の紙面と垂直な中心軸線20まわりに
90度回転し、チャンネル15、17の断面を開放するようになっている。
図2では、図1に示されたホットエアオーブンは、フラップ19を開放した状
態で示されている。
フラップ19がこのような状態にあると、調理チャンバ5は、開口部15を介
して空気供給チャンネル16に接続され、かつ開口部17を介して、空気排出チ
ャンネル18に接続される。
食品、特に強冷凍されたチップ状のポテトを調製する際には、オーブンを次の
ように作動させる。
まず、オペレータが作動ユニット4により装置をオンにする。フラップ19を

調理チャンバ内にある食材を加熱する間に、水分が抜け、従って高温と組合わ
さって、水分を含む高温空気(内部で食材6が調理されている)が生じる。食材
6の中心部までの加熱が完了して、フラップ19を開けると、ファンは、空気供
給チャンネル16および開口部15を通して、バスケット11の方向に新しい空
気を吹き込む。
高温の水分を含む空気は、調理チャンバから開口部17を通して空気排出チャ

このような調製段階中のホットエアオーブン1の調理チャンバの温度低下を防
止するため、空気供給チャンネル内に加熱レギュレータを設けることが好ましい
。供給される空気は、必要な値である203℃まで加熱できるので、温度を低下

食材から抜ける水分を調理チャンバ5から除くと、調製プロセスのうちのロー

がオペレータへ送られる。この目的のために、バスケット11を再び本装置から
取り出し、360度回転させて空にする。
上記説明した装置では、開口部15、17を開閉するためのフラップ19は、
従来のスライド構造とは異なって、ガイドを通過せず、チャンネル内で自由に回
転されるようになっているため有利である。当然、調製プロセスのロースト段階
の間に不可避的に生じる油脂のはね返り分が、フラップの作動に悪影響を及ぼす
ことはなく、調理チャンバ5と隣接するフラップ19の側面に付着する。また共
