Abstract

PURPOSE:To improve the taste of rice by uniformly making rice into a starch by moving the heating point of a pot bottom in a breathwise direction in a boiling latter term process in which the almost 85% of free water is lost by boiling and the flow property of rice is eliminated. CONSTITUTION:A lot of burners 203 and 204 composed of plural burner pipes 20 in a fixed length formed in parallel are arranged in the lower direction of a pair of right and left non-terminal chain conveyers so that the burner pipes 20 can be almost parallel with the moving direction of the chain conveyers, and a rice cooking pot to be moved while being hung between the right and left chain conveyers is heated by the burners. Concerning such a continuous automatic rice cooking device, the burner pipes 20 of the burners 204 which belong to the latter half part of a boiling block to perform boiling among a lot of burners are inclined right and left.

2. Description of the Related Art As a continuous automatic rice cooker, Japanese Patent Publication Sho 56
As described in Japanese Patent No. 16645, a large number of rice cookers are suspended and transferred in a line between a pair of left and right endless chain conveyors, and a fixed length below the chain conveyors and parallel to the traveling direction of the conveyors. A plurality of gas burners consisting of multiple parallel burner pipes are placed closely in the anteroposterior direction in the high-heat cooking area in the early stage of rice cooking, and there is a specified interval in the front and rear in the low-pressure steaming area in the latter half of rice cooking. It is known that they are arranged.

In the above known rice cooking device, the entire area where the gas burner is arranged is divided into a cooking area by high heat in the early stage of rice cooking and a steaming area by low heat in the latter half of rice cooking.
In the cooking area, multiple gas burners are densely arranged,
The same gas burners were roughly arranged in the steaming area, and the direction of the burner pipes that compose the gas burner was fixed in parallel with the chain conveyor in all areas, so the part directly above the burner pipe on the bottom of the rice cooker. Only the heat is directly and continuously heated, and uneven heating occurs between the burner pipe and a portion deviated from just above the burner pipe, which causes the following problems.

That is, according to the research conducted by the present inventor, it has been found that the heating process for the high-cooking in the early stage of rice cooking should be divided into at least two steps, ie, a temperature raising boiling step and a boiling late step, to consider the heating conditions. First of all, in the temperature rising boiling step, the temperature rising step from the start of rice cooking to the start of boiling, and a few minutes after the start of boiling, about 85% of free water is absorbed by rice,
Including the initial boiling process until the fluidity of rice becomes extremely small, it is necessary to reach boiling in the shortest possible time in the above temperature raising process. It was found that it is necessary to allow the rice to rapidly absorb water and to convert β starch into α starch. Therefore, in the temperature raising / boiling step including the temperature raising step and the initial boiling step, it is desirable to continuously heat the same point on the bottom of the kettle as in the above-described cooking step.

However, if most of the free water, for example 85%, is lost in the above boiling initial step, the flow of rice becomes almost impossible. When heated, the remaining water will boil up through the existing rice gap only at the same point as the heating point of the kettle, that is, from a specific boiling nucleus, and the water at other points will form a new rice gap. Since it did not boil up, it became impossible to uniformly make α-starch of rice, and cooked rice with a good taste could not be obtained.

According to the present invention, most of the free water is lost in the initial boiling step of the temperature raising boiling step, and the heating point at the bottom of the pot is moved in the latter boiling step after the fluidity of the rice disappears. This enables uniform α-starch formation and makes it possible to obtain cooked rice with a good taste.

A continuous automatic rice cooker according to a first aspect of the present invention comprises a plurality of burner pipes, each of which is composed of a plurality of burner pipes arranged in parallel, below a pair of left and right endless chain conveyors. Are arranged so as to be substantially parallel to the transfer direction of the chain conveyor, and the rice cooker suspended and transferred between the left and right chain conveyors is heated by the burner to heat and boil the contents of the rice cooker. In the continuous automatic rice cooker adapted to sequentially perform steaming, the burner pipe of the burner belonging to the latter half of the boiling area in which the boiling is performed is inclined to the left and right among the plurality of burners. .

In the above first and second inventions,
The latter half of the boiling area is preferably the area after the point where about 85% of the free water is lost due to the boiling of the contents of the rice cooker, that is, the point after the initial boiling step is completed. The inclination angle of the burner pipe is preferably such that one end of the burner pipe is displaced from the other end in the width direction by the distance between two adjacent burner pipes. In the area where the steaming step following the boiling step is performed (steaming area), the burners or burner pipes described above should be placed coarser than in the boiling area, or the burner should be lowered to move away from the rice cooker, or the burner and rice cooker should be removed. A metal plate for indirect heating can be interposed therebetween, and the burner pipe of the final burner in the steaming area can be inclined or formed inclinable as described above.

In the first aspect of the present invention, the burner pipe of the burner belonging to the latter half of the boiling area is tilted to the left and right. Therefore, when the rice cooker moves on this burner, the heating is made to face the burner pipe at the bottom of the cooker. The point moves in the width direction. Therefore,
When most of the free water is lost and the flow of rice disappears, the remaining water does not boil up through the existing rice gap only from specific boiling nuclei, and the water at other points also becomes fresh rice. The boiling point rises through the gap, so that the starch in the rice cooker is uniformly made into α-starch, and the taste of the resulting cooked rice is improved.

In the second invention, the burner pipe of the burner belonging to the latter half of the boiling area is formed so as to be able to be tilted to the left and right. Therefore, the rice cooked according to the first invention is tilted by tilting the burner pipe to the left and right by an appropriate amount. The device can be configured. When the burner pipe in a wide area including the latter half of the boiling area is formed so as to be tiltable, even when the capacity or the content amount of the rice cooker is changed, the desired burner pipe is moved to the left or right according to the change. Can be tilted.

Further, in the invention described in claim 2, the burner pipe of the burner belonging to at least the latter half of the boiling area in which the above-mentioned boiling is carried out is formed so as to be able to be tilted left and right among the plurality of burners. Therefore, the left and right inclination angles of the burner pipe can be adjusted to improve the taste of cooked rice in the same manner as in the invention of claim 1, and when the capacity of the rice cooker or the content amount is changed, this change is also made. Depending on the situation, the desired burner pipe can be tilted left and right by an appropriate amount to enable optimum rice cooking.
