の一端に固定フランジ4aを設けておき、このシャフト4
に環状突出部2を成すセラミック円板2aと、該円板2aよ
り小径のセラミックからなるスペーサリング6とを交互
に複数枚積層し、他方端にてナット7でもって締着す
る。この場合、シャフト4の熱膨張分を吸収すべく、ナ
ット7とスペーサ6との間にワッシャ、ゴム板等の弾条
体を介在させておくとよい。

を必要以上に停止させることがない。また、円板やスペ
ーサリングには麺や粉の付着がないことから、異形麺が
できるような恐れがなく、さらに、円板に刃かけや刃こ
ぼれが生じたり、スペーサリングの外周面に荒れが生じ
たとしても締着しているナットをはずし、不良の円板や
スペーサリングのみを取り替えることにより長期間にわ
たって良好な切断特性を維持することができるなど、本
発明の製麺用切刃ロールによれば優れた製麺機、ひいて
は優れた品質の麺製品を提供することができる。
