本発明は食品を切断するためのセラミ’7り回転刃に関

動的に切断作業を行うようにしたものが次第に広く使用
されるようになってきた。このように食品を、特に所定
の厚さに切断する装置には円盤状をした回転刃が多(用
いられており、かかる回転刃には鋼鉄、ステンレス鋼、
タングステン−モリブテン合金などの金属で作られた円

刃部材3を第1図で示した実施例のように同一の金属円
盤状体2の外周部に同一の刃先角度をもったアルミナ、
ジルコニアセラミンク製刃部材を各々4枚ずつ螺着、固
定し一体の回転刃1を構成する。このように半円がアル
ミナ、ジルコニアセラミック製の刃部材を備え、刃先角
度θの異なった回転刃1を汎用されている切断装置(図
示せず)に装着し、550回転/分のもとに各種の食肉
、ハム、食パンなどの食品を同一条件のもとで切断する
実験を行った結果を第1表に示す。なお、この実験に用
いた回転刃1としては各角度ごとに5枚ずつ切断実験に

れがないことからすこぶる衛生的でしかも食品に金属臭
が乗り移ることもなく、さらに刃部材が分割型であるこ
とから生産性がよいなど安価で長期間の使用に耐える食
