てレタスを線切り、あるいは角切りをし、水流ダクト中
に落す。切断直後は呼吸作用が急増するので、水により
酸素の供給を遮断するためである。カット野菜を水流に
て移送し、旋回流二次洗浄槽5にて動かしながら洗浄
し、細胞液を除去する。洗浄されたカット野菜は、更に
三次洗浄槽7にてはジェツト水流にて仕上げ洗浄を行な
う。次に2台の遠心脱水機8を使用し、5分毎に搬入、
脱水を交互に運転する。従来は内カゴに搬入し、遠心脱
水後、内カゴをクレーンにて釣り上げ搬出していたが、
