発生する蒸気の量に適した回転数で常に蒸気排出ファン
を動作することができる。そのため、調理器具から発生
する蒸気が多く排出温度が高いときは回転数を高く、蒸
気が少なく温度が低いときは回転数も低く蒸気排出ファ
ンを動作するもので、騒音を低く、また電気の消費量を
少なくすることができる。

御部は、蒸気排出口に設けた温度検知器の信号により調
理器具から発生する蒸気が多く排出温度が高いときは回
転数を高く、蒸気が少なく温度が低いときは回転数も低
く蒸気排出ファンを動作制御するようにした蒸気排出フ
ァン付収納庫。
