Abstract

PURPOSE:To reduce the flow rate of an exhaust fan and diminish noise generation by a method wherein an air supply path is laid along the shape of a hood which collects contaminated air in a kitchen, and fresh outside air is supplied by an air supply fan through the air supply path. CONSTITUTION:A motor is driven to rotate an air supply fan 3 and an exhaust fan 6 via a shaft 8. Fresh outside air is sucked from outside through an air supply duct 10 by the air supply fan 3, cleaned by a filter 5 and blown downward through an air supply path 4 that is laid along the shape of a hood 1. The fresh air is blown out so as to surround a cooking table 12 and stoves 13 and an air curtain is formed between the hood 1 and the cooking table 12. This air curtain effect restrains smoke, heat, odor, etc., generated from the stoves during cooking from dispersing, for example, and in addition it eliminates an influence of a light wind. Therefore, the surface velocity just in front of a grease filter 9 is reduced with its collection performance maintained, so that the flow rate of the exhaust fan 6 is reduced.

て排気量に見合う給気量を制御しながら給気したり、給
気する気流を予熱して同時給排気を行うシステム等が開
