従つて食品全体に水分が多量に残つて、いわゆる
むれた仕上り状態となる不具合が生ずることがあ
つた。又、斯様な問題は上記従来の加熱調理装置
によつて炒飯等を作る場合、あるいは豆を煎る場
合、または小魚(じやこ等)を香ばしさをだすた
めに煎る場合でも少なからず生じていた。ここ
で、加熱時間を長くすれば、水分の少ない炒め物
を作ることができると考えられるが、しかしこの
場合、炒め過ぎて味が落ちてしまい、しかも燃料
消費量が多くなつて経費が嵩むと共に、調理時間
も長くなつてしまう。

と、そのハンドル軸11及び鍋6の一方の支軸7
に設けられたギヤ機構12とから構成されてい
て、ハンドル10の回転操作によつて前記鍋6を
第1図実線位置と二点鎖線位置との間で回動させ
る様になつている。第1図において、13は二枚
のインペラ14,15を有して成る撹拌体で、こ
れは、その撹拌用軸16を鍋6外面部に取着した
軸受ユニツト17に支承せしめることにより該鍋
6内に回転自在に設けられている。一方、機械室
3にあつてその下部には撹拌体13駆動用のモー
タ18が設けられていると共に、上部には動力伝
達軸19が軸受ユニツト19a,19aを介して
設けられており、この動力伝達軸19はベルト伝
達機構20を介して上記モータ18の回転動力を
受ける様になつている。そして上記動力伝達軸1
9には駆動ギヤ21が連結されており、この駆動
ギヤ21は、前記撹拌用軸16に取着された従動
ギヤ22と噛合し、以てモータ18により撹拌体
13を回転駆動せしめる様になつている。而し
て、従動ギヤ22は鍋6の第1図矢印A方向及び
矢印B方向への回動に伴つて駆動ギヤ21に対し
離間及び噛合する。尚、22aはギヤカバーであ
る。23は熱源たる例えばガスバーナであり、こ
れは鍋6の下方部である燃焼室2内に立設状態に
複数配設されていて、その噴炎口23aは鍋6の
下面を直射する向きにある。24はこれらガスバ
ーナ23を包囲すべく設けられた筒状のカバーで
ある。

にさらされつつガスバーナ23の燃焼熱を受けて
加熱調理即ち炒められる。この折り、鍋6内にお
いては、野菜等から水分が滲出することや、めん
ほぐし用の水の投入やさらにソース等の投入によ
つて水分が多くなるが、しかし本実施例によれ
ば、送気装置25によつて送り込まれる熱気によ
つてその水分を蒸発させることができ、この結
果、水分が少なくて仕上りの良い焼そば(炒め
物)を作ることができる。しかもこの場合、ガス
バーナ23の周囲に不可避的に生ずる熱気を、従
来のようにそのまま排気するのではなく、上述の
水分蒸発に利用するから、既存のガスバーナ23
を火力アツプ等をせずにそのまま利用して良好な
仕上りの炒め物を作ることができ、この結果、ガ
スバーナ23の排熱の有効利用を図り得、即ちガ
スバーナ23の熱効率を高め得、燃料消費量の増
加従つて燃料費の増加を来たすこともなく、又、
加熱時間を長くせずに済むので、炒め過ぎること
もなくて炒め物の味の低下も防止できる。

済むので、味が低下することも防止できる等、優
れた効果を奏する。
