上でローラーによつて行なう場合、これを観察す
ると、コンベアーによる麺帯の移動方向に発生し
ていることがわかる。つまりグルテンはかなりの
程度、麺帯の進行方向に平行な状態に形成されて
いるのである。ところが、このグルテンの麺に対
する役割を考慮すると、可及的に網目状になつて
くれることが好ましく、前記のように平行に発生
するとなると、この麺帯をさらに線切りする場合
の截断方向も規制され、要するに良好な麺帯とは
言いがたいものとなつていたのである。

式ローラーによつて巻き込むようにし、平行に発
生したグルテンを網目状に成形するようにしたも
のである。

ぼ横断し、かつ搬送される麺帯を逆行する方向へ
回転する駆動式ローラーによつて巻き込むように
するので、斜めに配設した駆動式ローラーによつ
て麺帯を斜め方向に巻き返すことにより、麺帯自
体が途中から斜めになり、したがつてグルテンも
複雑な交叉状態を形成することになり、いわゆる
腰の強い麺を形成することになるという効果を有
する。
