Description
(1)熱凝固性β-1,3-グルカン、油脂及びカルシウム塩を含有することを特徴とする固形油脂代替組成物。
(2)さらにセルロースを含有することを特徴とする上記(1)に記載の固形油脂代替組成物。
(3)上記(1)又は(2)に記載の固形油脂代替組成物を食品に含有させることを特徴とする食品の油脂感を増強する方法。
必要に応じて本発明の固形油脂代替組成物に含有させるセルロース量は、固形分質量比で熱凝固性β-1,3-グルカン1質量部に対して、0.1~20質量部が好ましく、カルシウム塩1質量部に対して、0.1~10質量部が好ましい。
水78.5質量部と粉末状カードラン(三菱商事ライフサイエンス社製。以下同じ。)5質量部を撹拌して懸濁させ、水分散液を得た。この水分散液に、セルロース粉末(100メッシュパスが90%以上)2.5質量部、炭酸カルシウム2.0質量部、サラダ油10.0質量部及び加工澱粉2.0質量部を添加してさらに十分に撹拌し、耐熱性の型に流し入れ、これを脱気シーラーで脱気及びシーリングし、95℃の蒸気加熱装置(スチームコンベクションオーブン、マルゼン(株)製)に投入し、40分間蒸気加熱した。40分後、オーブンから取り出し、室温まで冷却し油脂含有ゲル組成物(本発明の固形油脂代替組成物に相当)を得た。
セルロース粉末を全量水に置き換えたほかは実施例1と同様にして油脂含有ゲル組成物(本発明の固形油脂代替組成物に相当)を得た。
炭酸カルシウムを全量水に置き換えたほかは実施例1と同様にして油脂含有ゲル組成物を得た。
炭酸カルシウム及びセルロースを全量水に置き換えたほかは実施例1と同様にして油脂含有ゲル組成物を得た。
実施例1、2及び比較例1、2で調製した油脂含有ゲル組成物をおよそ10mm×10mm×30mm程度の直方体状に切り出し、これを喫食した際、油脂感を感じる順に順位を付け1位を1点、2位を2点、3位を3点、4位を4点として評点した。1位、2位、及び/又は3位が2検体ある場合は、それぞれ1.5点、2.5点、3.5点とし、1位、2位がそれぞれ3検体ある場合は、それぞれ2点、3点とした。6名のパネルが評価し、検体ごとの評点の合計で評価した。また、喫食時の感想についても聴取した。結果を表1に示す。
ベーコン風食品の製造方法を、肉赤身製造用ゾルの調製と、脂肪製造用ゾルの調製と、それらを用いたベーコン風食品の製造に分けて以下に説明する。
水46質量部と粉末状カードラン2.8質量部を撹拌混合して水分散液を得た。得られた水分散液にリン酸三ナトリウム(無水)0.5質量部、水29質量部の水溶液を添加し、カードランを溶解させた後に、50質量%の発酵乳酸水溶液0.6質量部を添加してpH7.3に調整してカードランの均一な水分散液を得た。セルロース粉末(100メッシュパスが90%以上)2.5質量部、加工澱粉(アセチル化アジピン酸架橋澱粉)3.0質量部、デキストリン0.7質量部、粉末状大豆たん白2.0質量部、食塩1.0質量部、醤油0.5質量部、うま味調味料0.4質量部、香料(スミビヤキフレーバー、ベーコンフレーバー)0.5質量部、色素0.01質量部、サラダ油10.0質量部及び乳化剤0.23質量部を添加してよく撹拌混合し、肉赤身製造用ゾルAを調製した。
水89質量部と粉末状カードラン5質量部を撹拌して懸濁させ、水分散液を得た。この水分散液に、炭酸カルシウム(白色色素)2.0質量部、サラダ油2.0質量部及び加工澱粉2.0質量を添加してさらに十分に撹拌して、脂肪製造用ゾルBを調製した。
上記肉赤身製造用ゾルAを耐熱性の型に流し入れ、上記脂肪製造用ゾルBを肉赤身製造用ゾルAの上に流し込み、さらにその上に肉赤身製造用ゾルAを流し入れる工程を複数回繰返し、肉赤身製造用ゾルAと脂肪製造用ゾルBが複数層交互に積み重なったゾル積層体を耐熱性の型の中で調製した。ゾル積層体が調製された耐熱性の型を、脱気シーラーで脱気及びシーリングし、95℃の蒸気加熱装置(スチームコンベクションオーブン、マルゼン(株)製)に投入し、40分間蒸気加熱した。40分後、オーブンから取り出し、室温まで冷却し、塊状のベーコン風食品を製造した。これを、さらに-40℃に急速冷凍して2月間冷凍保存した。
肉赤身部と脂肪部が層状になっており、外観はベーコンの薄切りを思わせた。薄切りした状態で持ち上げても、肉赤身部と脂肪部は切り離されることなく、密着していた。
数名のパネルに上記ベーコン風食品のサンプルを試食してもらったところ、実際のベーコンに似た食感、味及び風味であったとの評価を得た。
Claims (3)
- 熱凝固性β-1,3-グルカン、油脂及びカルシウム塩を含有する固形油脂代替組成物であって、前記カルシウム塩を、熱凝固性β-1,3-グルカン1質量部に対し、0.01~1質量部含有することを特徴とする前記組成物。
- さらにセルロースを含有することを特徴とする請求項1に記載の固形油脂代替組成物。
- 請求項1又は2に記載の固形油脂代替組成物を食品に含有させることを特徴とする食品の油脂感を増強する方法。
