Description
・ タイプ1糖尿病は、自己免疫疾患であり、これは、対象が十分なレベルのインスリンを産生することができないことを意味する膵臓β細胞の破壊を招く;
・ タイプ2糖尿病は、より複雑な状態であり、いくつかの関連する病気に起因し得るが、インスリンの代謝作用に対する耐性を一般に伴う。例えば、タイプ2糖尿病は、年齢、肥満及び座っていることの多い生活様式に関連付けられ、これらの全てがインスリン耐性を招く。
i) 低GI=55%以下;
ii) 中GI=56~69%;
iii) 高GI=70%以上。
i) RS1 - 種子又はマメ科作物及び未加工の全粒穀物において見られるような物理的に到達不能な又は難消化性の不溶性耐性デンプン;
ii) RS2 - 高アミローストウモロコシデンプンの場合と同様に、デンプンの高次構造のために酵素に到達不能な不溶性耐性デンプン;
iii) RS3 - パスタ等、デンプン含有食品が調理され、冷却されるときに形成される不溶性耐性デンプンであり、これは劣化によって生じ、水中で加熱され、溶解され、次いで冷却された後に、まとめて処理された可溶性デンプンが溶けにくくなる;又は
iv) RS4 - 消化に抵抗するように化学的に改変された不溶性デンプン。

タイジャスミンライス+6.0%押出成形穀粒のGI - 55(低GI)
Claims (27)
- 食料品の血糖指数を低下させるための組成物の形態にある先端食品素材であって、前記先端食品素材が、不溶性耐性デンプン、可溶性繊維、及び少なくとも1種の炭水化物酵素阻害剤を含むか又はそれらからなり、前記炭水化物酵素阻害剤が、炭水化物消化に関与する酵素の活性を低減させるか又は妨げるものであり、
前記不溶性耐性デンプンが前記組成物の40~80重量%の範囲から選択される量で存在し、前記可溶性繊維が、前記組成物の10~20重量%の範囲から選択される量で存在し、かつ前記少なくとも1種の炭水化物酵素阻害剤が、前記組成物の0.5~2.5重量%の範囲から選択される量で存在する、前記先端食品素材。 - 不溶性耐性デンプンが、40%、41%、42%、43%、44%、45%、46%、47%、48%、49%、50%、51%、52%、53%、54%、55%、56%、57%、58%、59%、60%、61%、62%、63%、64%、65%、66%、67%、68%、69%、70%、71%、72%、73%、74%、75%、76%、77%、78%、79%及び80%を含むか又はそれらからなる群から選択される量で存在する、請求項1に記載の先端食品素材。
- 不溶性耐性デンプンが、人工的に製造されるか又は天然源に由来する、請求項1又は2に記載の先端食品素材。
- 不溶性耐性デンプンが、穀物、種子、マメ科作物、トウモロコシ、コメ、オート麦、大麦、堅果、オオバコ、タピオカ、ジャガイモ、豆、果実及びプランテーンを含む群から選択される天然源に由来する、請求項3に記載の先端食品素材。
- 不溶性耐性デンプンが、RS1、RS2、RS3及びRS4を含む群から選択されるサブタイプである、請求項1~4のいずれかに記載の先端食品素材。
- 不溶性耐性デンプンが、サブタイプRS2又はRS3である、請求項5に記載の先端食品素材。
- 可溶性繊維が、10%、11%、12%、13%、14%、15%、16%、17%、18%、19%及び20%を含むか又はそれらからなる群から選択される量で存在する、請求項1に記載の先端食品素材。
- 可溶性繊維が、チコリーの根、穀物、種子、トウモロコシ、コメ、オート麦、大麦、堅果、オオバコ、タピオカ、豆及び果実を含む群から選択される天然源に由来する、請求項1~7のいずれかに記載の先端食品素材。
- 炭水化物酵素阻害剤がデンプン酵素阻害剤である、請求項1~8のいずれかに記載の先端食品素材。
- デンプン酵素阻害剤が、アミラーゼ阻害剤、スクラーゼ阻害剤、マルターゼ阻害剤、及びグルコシダーゼ阻害剤を含む群から選択される、請求項9に記載の先端食品素材。
- 酵素阻害剤が、1%又は2%を含むか又はそれらからなる群から選択される量で存在する、請求項1に記載の先端食品素材。
- 組成物が、前記組成物の0.1~10重量%の範囲から選択される量で存在するタンパク質をさらに含む、請求項1~11のいずれかに記載の先端食品素材。
- タンパク質が、1%、2%、3%、4%、5%、6%、7%、8%、9%及び10%を含むか又はそれらからなる群から選択される量で存在する、請求項12に記載の先端食品素材。
- タンパク質が、大豆、小麦、エンドウ、コメ、及びホエイを含むか又はそれらからなる群から選択される天然源に由来する、請求項12又は13に記載の先端食品素材。
- 組成物が、前記組成物の0.1~10重量%の範囲から選択される量で存在する少なくとも1種のハイドロコロイドをさらに含む、請求項1~14のいずれかに記載の先端食品素材。
- ハイドロコロイドが、1%、2%、3%、4%、5%、6%、7%、8%、9%及び10%を含むか又はそれらからなる群から選択される量で存在する、請求項15に記載の先端食品素材。
- ハイドロコロイドが、キサンタンガム、ローカストビーンガム、寒天、アルギネート、カラギーナン、及びグアーガムを含む群から選択される、請求項15又は16に記載の先端食品素材。
- 不溶性耐性デンプンが70重量%の量で存在し、可溶性繊維が15重量%の量で存在し、酵素阻害剤が0.5%の量で存在し、タンパク質が2重量%の量で存在し、ハイドロコロイドが0.5重量%の量で存在する、請求項15又は16に記載の先端食品素材。
- 不溶性耐性デンプンが50重量%の量で存在し、可溶性繊維が10重量%の量で存在し、酵素阻害剤が1%の量で存在し、タンパク質が2重量%の量で存在し、ハイドロコロイドが0.5重量%の量で存在する、請求項15又は16に記載の先端食品素材。
- 水が残りの構成成分を供給する、請求項18又は19に記載の先端食品素材。
- 組成物が、ビタミン、ミネラル、脂肪酸、脂質微量栄養素、及び補酵素を含むか又はそれらからなる群から選択される少なくとも1種の強化剤をさらに含む、請求項1~20のいずれかに記載の先端食品素材。
- 組成物が少なくとも1種の安定剤をさらに含む、請求項1~20のいずれかに記載の先端食品素材。
- 組成物が粉末の形態で提供される、請求項1~20のいずれかに記載の先端食品素材。
- 穀粒、ヌードル、リボン、レイヤー、チャンク、シェル、フレーク、スレッド及び顆粒を含む群から選択される食品粒子に形成される、請求項1~23のいずれかに記載の先端食品素材。
- 請求項1~24のいずれかに記載の先端食品素材と、少なくとも1種の食料品とを含む複合材であって、前記食料品が血糖指数を有し、前記血糖指数が前記先端食品素材の添加によって低下する、前記複合材。
- 有効量の先端食品素材が、食料品及び/又は複合材の血糖指数を消費者にとって有益である範囲内に持っていくように、前記複合材に添加される、請求項25に記載の複合材。
- 食料品の血糖指数を低下させるための、請求項1~24のいずれかに記載の先端食品素材の使用。
